Strawberry Tomato Salad with Black Pepper and Basil Oil

Strawberries and tomatoes do not usually end up on the same plate. It sounds too sweet, too unusual, maybe even slightly wrong. Which is exactly why it is worth trying.

I didn’t invent this combination out of culinary bravery. I made it because I had strawberries sitting around, tomatoes that needed eating, and enough mild desperation to throw them together on a plate and call it lunch. And then—it worked. Ingredients

  • 250 g strawberries
  • 250 g flavorful tomatoes
  • 3 tbsp olive oil
  • a small handful of fresh basil
  • 1–2 tsp maple syrup or agave syrup
  • 1–2 tsp lemon juice
  • freshly ground black pepper
  • salt
  • optional arugula or baby spinach

How to prepare

  • Wash the strawberries, remove the stems and cut them into halves or quarters.
  • Cut the tomatoes into bite-sized pieces.
  • Blend or finely chop basil with olive oil to make basil oil.
  • Place strawberries and tomatoes in a bowl.
  • Add maple syrup and lemon juice, season lightly with salt and mix gently.
  • Drizzle with basil oil.
  • Add freshly ground black pepper.
  • Optionally serve with arugula or baby spinach.
